Yesterday we harvested the Shiro Utsuri that we bred at the end of April. Myles gave up his time again and came and gave us a hand harvesting and selecting. As always, we are looking for great skin quality and body shape. On Shiro Utsuri, you want to see good quality black and evidence of underlying sumi which is still to develop and that indicates that the fish will have a good balanced pattern when finished.
These guys are about 4-5 inches long on average and we kept just under 300 to grow on. These will go into our tosai house now for the winter. Not all of them will be taken through to next Spring and as the winter progresses, we will from time to time re-select the best ones with the keepers staying in the tosai house and the others being made available for sale.
